During her visit, Dr. Khor participated in a tasting session that showcased how these innovations translate into exciting food prototypes. She sampled familiar local favourites, including plant-based ngoh hiang, gyoza, and high-protein tofu. Notably, the plant-based ngoh hiang replicated the protein profile of chicken through process optimisation and product development. She also discovered nutrient-dense alternatives like high-protein tofu and spreads, made possible by high-pressure processing technology, a widely used non-thermal food preservation method in the food industry. Additionally, Kikkoman showcased a plant-based meal kit — a nutritious yet palatable option that promotes healthy and sustainable eating.
Some company highlights at ’s FTIC included a tasting of ’s made from surplus bread, soy pulp, and spent grains, along with a citrus-infused drink from . This drink addresses sustainability challenges in citrus supply chains and sugar reduction, allowing consumers worldwide to continue enjoying their citrus juice experience. demonstrated how adding a small amount of their trademark lipids from naturally occurring sources transforms the taste and aroma of alternative proteins and dairy, making them more appealing to consumers.
